Cacao Ceremony starts from the soil, where Cacao is growing, from nature and intercrops around, correct and wise harvesting of Cacao pods, fermentation of Cacao beans, right drying, pealing, conching, melanging, cooling in the molds... 
And all of these stages take weeks after harvesting!

🌳 Our cacao trees grow in family gardens, in very rich soil, in the tropical mountains, surrounded by waterfalls, flowers, cardamom, vanilla, other spices, and fruits.

This also significantly influences the final taste of our cacao. It can have gentle fruity notes, melting in your mouth.

Personally, I love to eat my 100% Amma Cacao as it is, without adding anything.

Fermented Just Right!

🍃All the steps of the production is under our control from the very beginning:
- We produce Amma Cacao from freshly harvested cacao pods, and on the same day, we start the process of fermentation of the cacao beans.

Love From The Sun!

- Then it is sun-dried during several days in a special facility, far away  from the living houses and the road.

Hand Selecting the Best Quality For You

- After that we hand-select the best, healthy, big, and beautiful beans, and this process also influences the final taste of the Ceremonial cacao.

Gently Roasted

- And only after precise selection Amma Beans are directed to one other facility, where it is gently roasted by the hot air with constant rotation.
This stage is crucially respocibale - if you overroast even small amount of Cacao beans, it will not only diminish its healthy benefits, but also ruin the taste of all the batch!

Deshelling By Hand

- On this etap Amma Cacao beans are peeled to open up the tenderness of each cacao nib.
Honestly, for me it is a breathtaking moment - when we can finally see the beauty within.

Fine Grinding For Extra Smoothness

- And finally, it goes to the melanger for a long time, during one working week to create exquisite cacao paste, or  as it called - “cocoa liquor” (from “liquid” or “fluid”), as well as it called  “raw chocolate” - which is contains both cocoa solids and cocoa butter (53% in average) in roughly equal proportion.

Shaped To Please

- Then we pour it into moulds, allowing it to naturally cool down and solidify.

Safely Packed And Sealed For Freshness

- Then Amma Cacao blocks are packed and sealed to keep their taste and healthy qualities well preserved for at least 1 year.
